meatless friday and the cutting room floor



Red alert....A blog buddy needs votes..

I have decided to post some meatless or seafood dishes in honor of those that partook in mardi gras. I think my black pasta scared a few people so I am opting for something a little more in the middle of the road on this one. Egg season is amoungst us. Eggs are a big deal this time of year and we eat tons of these little boys anyway so why not show a kicked up egg salad.



This eggy delight is some cajun spiced eggs with black olives and a mustard with bite - spicy. Oh and these pictures should have ended up on the cutting room floor - I think rather than have a certain day for 'the cutting room floor' it will simply get peppered in as it happens. Why are these on the cutting room floor you ask? I will tell you why, too grainy because they were shot in too low light with the camera trying to compensate for the lack of light resulting in a flat grainy photo.

Eggs are perfect or perfection in many ways! I could easily have grabbed one of those eggy delights and sat myself in a quiet corner just to enjoy!

Can you believe I've never had egg salad? Ever?
We just didn't have salads growing up. Anything made with mayonnaise, basically. Mom can't stand the stuff.

Egg salad is one of my favorites! Here in Chicago a popular sandwich on fridays is a pepper and egg sandwich. I'm not a lent participant, but I do look forward to the season just for these little doosies!

I don't notice flat or grainy when looking at what you have on the table. My mouth sees better than my eyes.

I found a way to make most fabulous low-fat egg salad. Yours looks just as absolutly delicious as well. I really like egg salad, as it's such a light food when you want something substantial, but not heavy.

I put my food on the stove, under the light of the "daylight" CF bulb, to avoid the flat and grainy look. Not always pretty, but always real.

I'm not an egg salad fan, but now you have me wanting deviled eggs again.

I'm with Micky-T, so captivated by the olive/egg combo that the photo looks fine. Capital idea! Me thinks someone is preparing for the EB breakfast later in the month, non?

I work with the American Egg Board and love your recipe! Did you know that the week after Easter is National Egg Salad Week? That would be a great recipe for those Easter egg leftovers!
