dress whites


T
hese are not navy beans they are great northern beans and they taste great, especially with a little munster cheese, cheddar cheese, avocado and green chile.



Beans cook so quick in a pressure cooker and timed right they can be just as good as if they took hours in a pot.




Chile that was grown, picked, roasted, peeled and dehydrated in New Mexico makes it to New York and gets reconstituted with a little water in the microwave.



Ladle up a nice bowl of beans, add some avocado, some cheese and some diced chile, hit it with little fresh ground pepper and you are in bean business.

Beans! Don't you just think they have an irresistible inside, and outside. The way they look, the shape, how different they look in color and size, but like members of the same family. And how well you feel after having eaten them. Can you tell I like beans? Sadly it's not a hit among the others in my house..

I was introduced to Great Northerns when I lived in Minnesota and they quickly became one of my favorite legumes! Yours look yummy!

When I was a kid we were allowed our choice of food on our birthdays. My oldest sister had everyone terrorized into asking for T-bone steak -- except me.

I asked for Great Northern bean soup (made the Appalachian way, with fatback, and garnished with relish).

jeanne: I dont really have a 'way' that I make these - sometimes with smoked turkey or pork - sometimes pureed and put on toast drizzled with olive oil like a bruschetta thing..I switch it up.

beth: I will dehydrate some and you can add water and eat...

How different are Great Northerns from white kidneys? I made my special soup today and used white kidney beans- best soup I ever had in my life! I'll have to try Great Northerns next.Soup from scratch is the best. I sure wish I could cook like you tho DB!

You can't go wrong with beans! I'm a big fan of Great Northern beans--they have a good texture. Creamier than a navy bean.

Those look delicious with a bit of cheese and some chile :)

starrlife: the great northerns are similar in size to a pinto but with a distinctly more delicate flavor..I would love to try your soup..

tavolini: I hated beans as a kid and love them as an adult...as a kid all we had were pintos I guess I grew bored with them....

beans. Yeah I guess OK. But I would definitely not turn down some of those home made chips, and some warm cocoa with extra nutmeg !! I know I would love it!!

I use them in my white chili, but beans are hard on my digestion- go figure..

monica: people seem to either love beans or hate them...the poor misunderstood bean.

buff: a pinch or so of epazote helps that whole bean 'issue'


Beans need to be helped along to become a complete protein - cornbread, rice, a vegetable...but in the same note you can use too much protein like meats and cheeses and it is these two situations that make beans 'active' if you know what I mean.

Tavo doesn't like pintos, either. His favorite are black beans. I love them all--always have. Its interesting to think about what you liked as a kid and what you like now. I used to adore spaghetti-o's. I had some last year and almost threw up--so gross!!
