Do you prefer a cold photo?
Or a warm photo?
Bagels, yup I woke up this morning aching to make bagels. What does that feel like you wonder, well it is a pain like no other and its a pain that started around 6:00 AM. It would be so easy for me to go to any number of premiere bagel shops scattered all over this City and pick up some of the best bagels in the nation but nooooo, I have to make my own. The part I like about making my own anything is my 'everything' bagel will have the 'everything' that I want on it, sechezuan peppercorns, sea salt and parmesean. Recipe? what recipe. I read so many recipes so often that I am a cookbook. I altered a pizza dough recipe and a bread recipe and incorporated it with some bagel know how to come up with these bad boys. The secret is in the boiling water and if I told you what it was it wouldnt be a secret anymore.

I agree with Jeanne! These are beautiful. We don't have any good bagel shops near by so if I want one.. I have to buy the kind that are manufactured on an assembly line in some bakery from another state, stuffed in plastic bags and shipped to Idaho. LOL! I can buy fresh ones at the Co-op if I want to Drive into town (about 25 miles)
They look tempting! It's something a bit strange about cooking it before baking it in the oven isn't it? But I guess thats what's so special about the bagel. I like the warm colored ones!

You can bake, cook, photo style, make good drinks...seem friendly...can you sing too?

micky t: almost 2 hours - the time is consumed waiting for the dough to rise, I know all the steps I am going to do so its just a matter of staying on track...the bagels cooked for 15 to twenty minutes, boiled for two so you see it was all 'waiting' time.

i'm on my way... in spirit. this does make me want to run and buy fresh bagels.
Yeah, I know the secret of bagels, but I've never tried them. Too much work in the morning. Yours look great!

They look awesome! Do they have a lot of egg yolks in them? Bagels in the greater Detroit area have gotten so bad I haven't bought one in years.

marjie: well since I cant keep a secret I will tell you that it is baking soda and honey in the boiling water - is that your secret?
buff: well 6 bucks worth of bagels can add up fast (bagels are a buck to a buck 20 each) - there is no parking near any of the bagel places so to double park (which is common)it could possible cost a $150 ticket - otherwise it is a 45 minute walk or a 4 dollar bus ride plus walk and waiting or a 24 dollar round trip cab. Delivery is a whole other berry...but thats not why..I just felt like making them.
maggie: these have no egg yolks, only an egg wash - it's just like a pizza dough...though you could add egg yolk if you wanted...
Wow - very cool, this is something I'd never venture to make...just seems like it'd be a pain but it looks more manageable than I'd ever imagined...great photo!

As it turns out...I like the warm photo! These look absolutely beautiful...wonderful..I want to make big cushions out of them and sit inside and bask in all of their glory. I love bagels...and have never in my life had a fresh one, can you believe that?!
Looks great. I made bagels with my son just before the holidays. We tried the small size version. I don't recommend it. I say - the bigger the better. From experience.

I love making bread, but as much as I love bagels - and I don't live in NYC! - I have only made them once. Once? Because I wasn't thrilled with how they came out. But you may have just inspired me to try one more time. Mmmmmm.
