banana bread pudding


Sometimes you end up with too much of a good idea, I know because it happens to me all the time. I start off cooking for six and end up making enough for ten, whats worse is when I start off making 'just a little bit" and I end up with "way too much" - while in architecture "less is more" in cooking, less is never enough. Take banana bread for example, I cant seem to make one loaf and be content - no I need to make one with coconut and one with tonka bean and one with, oh I dont know just one more until I have too many. Sure its nice to eat it right out of the oven but its also easy to get burned out on it. When life gives you too much banana bread make lemonade, well not lemonade but thats how the adage goes - bread pudding is what I meant to say.


Why get all fancy? Make bread pudding in your favorite way - you know eggs and milk and what not or no eggs and milk and what not, do it however you do it best and let it cool a bit before you top it with a little dulce de leche or cajeta.


You will notice that I have two different bowls going on here, the reason is simple, I barely got to put on the creme fraiche and the bowls get whisked away and spoons plunged into them faster than you can say banana bread pudding with creme fraiche and dulce de leche! Sprinkle cinnamon on top it makes it taste even better.

I know what you mean by cooking up way too much or way too little. There's a just enough option. haha...

did you ever hear of New England pudding? That's bread pudding with blueberries in it. It's great stuff. I love banana bread, and on the rare occasion when it doesn't get eaten, I freeze it. A week later, everyone wants it again! And could you define cooking "too much"? It's one of those things that never happens in my little corner of the world.

I think one of the reasons God gave me sons is because I can never just make a small recipe. I always make enough to feed an army and we have leftovers forever. I think I'm in training for when they are teenagers.
