no bull
If I say I am going to make gator hand then by golly I am going to make gator hand. If I say I am going to braise that gator hand then I braise it.
No bull around here when it come to gator hands.
Now this isnt entirely true because what I am going to braise is going to be the gator arm or more 'pc' to call it the shank. We will be braising a gator shank - not the hand, or will we?
Yet still this is not entirely true because pork belly is in the house. Nice and fat yet lean, filled with contradiction -pork belly.
Why pork belly you may ask - because what if the gator shank is unsavory?
Its called 'back-up' and when mouths want to be fed its good to have something to feed them and besides not everyone is clammoring to have gator shank.
A little pork belly, a little gator, a little pico, a little coconut rice, oh and in case you are wondering - they both took quite a while to cook, almost longer than a confit...
A little blackberry balsamic and it smooths out the wrinkles.
...and so did the hand - did you ever read that monkey paw story - this is so like that!

I've only had gator once, it was in some sort of gumbo served in bayou country--it tasted fine, if a bit stringy.
So, was it tasty?

I'm with Maris. Speechless. You alternate between pictures that send me running screaming for mama and pictures that make me hungry. Having said that, I've been told alligator tastes good. I have yet to try, but I want to.
Gulp. I can honestly say, I've never had alligator and I am not sure I ever will, but I will try a slice of the pork belly.

-what did you do with the gator paw?
-How does gator taste with regards to is flavor and texture?
Becuase the paw is creepy to me... i wouldnt want to know it was gator until after i ate it.

I've had alligator once... it wasn't bad... That friggin' paw is the bomb!
This I will pass on! I had gator once in New Orleans...it tasted like rancid fish with the texture of chicken. I thought Jenn said "gator skank"...that would sum it up better.
I've got to say, I'm not ready for an identifiable body part on my plate. Whole lobsters creep me out, too, although I have no problem with parts.

I suppose if you lived on the bayou this would be a steady part of your diet, from what I hear. That hand is kind of scary, and it looks like you would need a chainsaw to cut through the skin. Are you sure you didn't kill a bigfoot on one of your mushroom expeditions?

but I'm actually quite familiar with crocodile meat. In Singapore, they have crocodile farms for this sort of thing. I guess alligator tastes the same?
