Trot on over and pick up a bowl of this goodness. I used up all the scallops that were whole and then I tossed the bits and pieces into this fried rice.
Let me tell you that scallop fried rice is unlike any other, shrimp is good, pork is fine and so is chicken but to bite into plump little bites of scallop - oh yeah!
I will definitely buy 'bottom of the barrel' scallops any ol' time I find em' because tossed into some rice like this they steal the show!
I had a few questions as to what the red spice was that was around the plate of the other scallop dishes - well its none other than good old New Mexico red chile - if you are talking about the orange stuff thats roe.
