nions from South Texas that I was told were the sweetest in all the land and since I have not had onions from all the land I would have to agree that these are some darn sweet onions. You might recall that I fried up a big bunch of onion rings but these were not to be consumed as onion rings these were going to become a 'parmesan,' so to speak.



I layered some onions, then a nice mix of cheeses including queso de oaxaca, parmesan, asiago, fontina and provolone, a layer of sliced fresh wild mushrooms, a layer of cheese and marinara sauce, another layer of fried onions, more cheese and marinara, a layer of fresh tomato, more cheese and a final layer of sauce and then large slices of provolone to top it off. Pop it in a 350 oven for 20 minutes until golden and bubbly - let cool slightly and slice.



For you ugly food lovers out there, you know who you are, this was all flavor without any of that distracting beauty - nice personality - pretty on the inside kind of thing, no need to get bogged down with appearances.



It would be so nice with a mesclun salad, but not a pretty salad a real ugly salad to keep with the theme.

I am so glad you put the onions to such good use..btw they are Texas 1015 onions (named after the planting date Oct 15), not only sweet, but really big cuz ya know how we like everything really big in Texas! Now if I could just figure out how to send you fresh yellow fin tuna, we got a mess of it this weekend and I'd love to see what you do with it..

I think that is just lovely! I have never been very good at making "pretty" food, so I am definitely one that puts flavor first...middle and last.

Those onion rings look delectable and would ask for just a few before putting the rest in that luscious lasagne.

I love Texas sweet onions and no matter how hard I try I can't duplicate that taste in my own garden. Stinking soil conditions!

I thought onion rings were perfect but nope this is an awesome idea! Nicely done.
