four!

e hit the driving range today but we didnt hit it too well.




This big ol' pile of onion rings is destined for greater things. It is part of an invention that I am going to post tomorrow, I sure hope it comes out good.



I found some HUGE wine cap mushrooms and I didnt want to toss out the incredibly large stems so I made something out of them.




Mock scallops anyone? You heard that right, 'fake scallops' for the vegetarian in all of us.


The stems were hot seared in a dry pan to caramelize a bit then a browned butter sauce was made with the fond.



The 'scallops' were then placed on some radish with the brown butter poured all around and then a drizzle of truffle oil and some Himalayan pink salt finished them off. The flavor and texture was fantastic, this is definitely a 'keeper' and I am anxious to try this out on my veggie friends.

I could go for some onion rings right about now. Dip 'em in some sauce. Yum! I had no idea that there was such a thing as fake scallops. Though, I'd prefer the real stuff.

can't wait to see what you do with those onion rings. that mushroom is gigantious! how did you know it was ok to eat? interesting what you did with them as fake scallops.

Those rings look awesome! Your scallops look so real, good fake-out, and brown butter is one of my favorite things in the whole world. I bet it was divine.

wow those mushrooms can be the substitute of umbrellas, haha, did you pick the mushrooms by urselves? how to know if they are edible or not?

wow that mushroom - wonder if that actually is a fake! the dish looks great, but I woud be REALLY mocked, 'cause I love real scallops :o)

the mock scallops are amazing! What a great idea! Love the pink salt here too, I've gotten some recently and haven't used it on anything yet.

You're right, I think these were the mushrooms I saw on West End Ave! The stems weren't quite as tall, but the caps looked just like that. Thanks so much for sharing your 'shroom knowledge with me ... I won't pass them by next time!
