green genie

reen, I heard there was a green thing going on so I wanted in on it. I was so confused as to how I was going to make my green thing not 'so' and terribly 'so' all at the same time.



I had beet greens but they lost their green after cooking so I had to scramble something up.



I went for fresh made carrot pasta with a green bean pesto and a splash of alfredo. Who knows where this came from but side by side with a piece of grilled swordfish the flavors were able to do their rambunctious thing with out stepping on any toes.

I am submiting this to Girlichef for the BSI going on with green.

carrot pasta? Neat. love the contrast of colors on the plate. Perfect pairing with the swordfish.

Oh what an innovative dish! Never heard of carrot pasta before. Bean pesto looks awesome and the dish would have tasted great with grilled fish. Awesome entry!

Nice looking dish! Great for using up carrots which seem to multiply on their own in my fridge.

Delicious!!! I love the green bean pesto, I've never ad it but it just sounds fresh and delicious! I adore beet greens, sometimes I buy the beets just for the greens!

buff: each bite stood on its own and got along well with the others

micky: you've got a good eye

marta: a little lime juice a little salt a little garlic and some fresh green beans in the processor - once they are a pulp add a little extra virgin olive oil

deb: hey, are you allowed out? just kidding...the carrot pasta is delicious and thanks for the compliment - meg is lucky to have you as a mom too you know....
