pork chops and applesauce

ell not exactly pork chops and not exactly apple sauce.



I took a pork tenderloin and butterflied it putting a delicious mix of sweet apples and sugary pineapple with sage and rosemary and a little chevre (I know, I know I am obessesed with this cheese lately) down the middle along with salt and pepper.

I rolled it up to look like this.




I roasted it and let it rest.




I cut big huge slices of it and served it with riced potatoes and pan juices and a side relish made out of the left over apple, pineapple, and herbs with some red and yellow tomatoes. (squint and you can imagine this picture) We were hungry after walking all day and I didnt feel like making a pretty plate.

Mmmm! That looks tasty! Especially with the cheese and the fruit inside, I bet that made the meat extra juicy!

Looks great - I totally know what riced potatoes are - the only way to have them is with heavy cream, roasted garlic, and real butter - hmmm - sounding good here.

Sooo - I have a whole pork loin in my freezer. I totally need to stuff it with something - only, I don't know what.

darius: I had tropical in mind when i was making this - pineapple is as far as I got...and the left over potatoes are ready for gnocchi

Well you did not need any help from me...you did very well...I have actually made this before...but some how all I see is this image in my mind of a celebrates crouch...with your stuffed pork...go figure

Yes, and as your rolling down the blog the pics of the tied up pork, oh, I said my mind was in the gutter...guess I need to get out of the office and kitchen for a while :)

emiline: it really did come out nice and juicy but I think the real clincher was the fruity, savory pan juices poured over the potatoes and meat

tavolini: I use that background and a blue one a lot to keep my pictures looking consistent - its the virgo in me...

chef e: dang you see subliminal persuasion everywhere...
