burger tricks
I have a lot of tricks up my sleeve that I have picked up over the years but this burger trick has to be my favorite. Big fat burgers never cook right, by the time the middle is done the rest is charred. Here's what you do:
These are a beef and pork mixture with garlic powder, diced onions, salt and pepper, a real 'ham'burger....I crack me up!
Make them like burger bagels, the middle cooks at the same rate as the outer edge.
Another delicious burger lunch that is nothing but a memory.

tavolini: I dont usually do the mixed meat and I usually like a couple thinner burgers over a thick one any day but today I wanted more bang less bun....I eat maybe 3 bagels a year -could be 4.
tavolini: the more I think about it the more tedious a burger on a bagel preserving the hole would be - all condiments and toppings would need the 'hole' as well or just fan around it....unless it doesnt matter.
hmm...well, then use a Krispy Kreme doughnut and do a Luther Burger!
Honestly, I'm more concerned with psychologically knowing that my burger reflects the bun. Its okay if condiments get in the way.
tavolini: I guess thats where we are different - If I show up wearing a sports coat I keep that baby on for the duration - no matter the discomfort...condiments be damned.
OMG, I have been turning that trick since my father let me cook on his grill at age 18. Are we fraternal or what? That burger looks damn good!

Great trick! I always make my centers thinner but haven't tried making a donut shape. I'll be giving it a try.

Thanks for that simple but clever trick; it was so simple, yet I never thought of it.
A friend of mine Canadian Chef Ted Reader has a similar trick except he makes a deep depression with his thumb in the center (not all the way through) and fills the void with Jack Daniels!
what a fabulous tip. Thanks. I normally just put a thumb print in the middle of my burgers and it works for me. I'll try this next time I make a thick burger.
