an you guess what I am going to do with this beautiful

Thai yellow eggplant?







Well if you guessed scoop out the insides and roast them then whip them into a dip you would be absolutely right. Baba Ganoush my way, a little tahini, a little garlic, a little lemon juice, some parsley a few pine nuts, salt, pepper and process until smoothish.

Put mixture back into the eggplant shell and serve it like a tennis pro, aces baby aces. Toast points, pita points just score points with this bad boy.



Lets be honest here its a lot easier to eat it out of a bowl!

Whoa, that eggplant is sweet. Never seen one like that before. Where did you get it?

Also, did not expect you to make it into a bowl and dip, but looks like a fun time to me!

That looks tasty--I dig baba ghanoush. Does the thai eggplant taste different than the big purple ones I'm used to?

tavolini: hard to tell with out a side by side comparison - it did seem to 'smooth' out nicer and less bitter than what I remember 'regular' to taste like - I am playing 'tennis pro radio' - last.fm is a decent site

I bet it would taste good with potet lompe, or potet lefse! Lefse, is quite similar to lompe, but usually square, and maybe the lompe's are a bit dryer than the lefse's. Wish I could send you a packet!

What a great way to use all of the eggplant! The dip looks amazing!

I'm not sure if you did this, but you can slice off a tiny bit of the eggplant at the bottom to make it level. Then the eggplant will stand "upright" and not roll when you're trying to get to the dip!
