soba

I have been on a little bit of a vegetarian kick around here lately. Making humous regularly, eating more vegetables than meat, for me makes me a weekend vegetarian. I am by no means vegetarian nor am I implying that refraining from eating meat at any meal throughout the day can make me a vegetarian I still feel 'vegetarianist' when I do it.



Soba, or Japanese buckwheat noodles, is a very popular dish in Japan. Served both hot or cold, it is considered polite to slurp the noodles loudly. I eat a lot of soba when I am feeling vegetarian. I use it like ramen, I use it like fideos I mix it up. I sometimes heat it then cold shock it and eat it like cold sesame noodles with a spicy peanut sauce. The ideal way is the simple way. Cook the noodles quickly as they cook quick, remove them from the hot water and shock them cold rapidly,sloshing around to rinse the starch (crucial) remove from cold while still warm if possible and serve with chopped green onion some sesame oil and a little side of miso soup and some soy sauce. Most times soba is served cold in the summer but I like to try and keep it a little tepid to warm - thats just me and my idiotic lack of conventions.

Good food is good food! I will never stop eating all the wonderful things God gave humans to eat! If you wish to be a vegan, vegetarian, or have a religious restriction to your diet, bless you! If you choose to embrace what Mother Nature made you, bless you too! Don't feel guilty, simply seek the light that you have not found yet...

Buff: thats true and funny because that is the light at the end of the tunnel thing and here in NYC I at least have two takes on that one. One: the light at the end of the tunnel is just another well lit tunnel. two: The light at the end of the tunnel is New Jersey.

maybe I am wrong...there I go mixing metaphors again.

I love soba noodles.... My fave way to eat them is with a peanut sauce and spinach (cooked) - yum.... In fact, I totally want to cook that for dinner, but have been marinating a duck for the last 24 hours and must roast that up tonight.

i LOVE soba noodles. i make a similar dish with peppers, toasted sesame seeds, rice vinegar and scallions. yum. my mouth just watered.

I adore good soba noodles. And Tanya made a delicious noodle dish for Kevin and I for lunch. I think it was made of soba noodles. Anyway, it was amazing!

Sounds kind of yummy. The thing about reading your blog is that you always have new things I've never tried, and your posts sort inspire me to try it, but then I have no clue where to find something like it around here! I can guarentee that Kroger doesn't carry it! I think I might have to venture out to an International market way on the other side of town. Now I'm gonna have to go through your archives and make a list!
