Already delicious buttermilk pancakes get an extra burst and melt in your mouth softness from the addition of chia seeds, but throw in some blackberries and sweet all that is precious do you have yourself a gold medal winner.
Christos Cakes
(recipe may be doubled or tripled or double tripled its up to you)
1 teaspoon of baking powder
1/2 teaspoon of baking soda
2 tablespoons of white sugar
1/2 teaspoon of salt
1 cup of flour
3/4 cup of buttermilk
1 egg
Chia seeds
Mix all ingredients together add 2 tablespoons of chia seeds.
Ladle batter on to hot griddle and place 3 blackberries in each pancake - cook until golden and serve with hot buttery maple syrup.
Buttery Maple Syrup
1 cup of pure maple syrup
2 tablespoons of melted butter
Mix butter and syrup together and serve hot over pancakes.
How do you like your pancakes? We had applewood bacon and sagey sausage links on the side.

The jacks look great and the photo makes me want to reach out and grab a bite! I made come breakfast muffin cups this morning for breakfast. Crescent roll base, bacon, egg, sharp cheddar cheese and baked for 20 minutes. Yummy stuff!!

We use the same tried and true pancake recipe here at home, varying just the things we decide to add in (blueberries, raspberries, chocolate chips, etc...) have never tried chia seeds-thanks for the inspiration!
I like my pancakes with blueberries! And stacked high. With Grade B maple syrup. And butter. And oh yeah, more pancakes.

These look great! I do a similar recipe with blueberries and buttermilk.. I also whisk egg whites so the pancakes stay nice, thick and fluffy :)
Fabulous! Wow! These make my old flat pancakes look like, well, old, flat, boring pancakes. Son is home for 3 weeks and he's the pancake freak so there you go - will try these for him!
