tortilla pizza
This is a major throwback to when I was a kid and then later in college when I wanted to act like I knew what I was doing. I could really score on the babes with my skills in the kitchen and these tortilla pizzas were always a charmer. In fact you could always tell if I wasnt interested in you if I suggested we go out to eat (well maybe you didnt know but I knew) anyway seriously who doesnt like melted cheese, sauce and a crust.
Take whatever flour tortilla you have on hand - homemade is best but any will do and cover it in tomato sauce, I use the one with spanish flavors which means it has a little pepper and garlic.
Put a little extra garlic powder and oregano to kick it up a bit.
Layer whatever cheese you want, I used a mix of provolone and mozzarella. Five hundred degree oven on a pizza stone and they are done in 5 minutes.
Let cool, slice and repeat. Look how massive my cutter looks next to this ten inch pizza. Its easy to eat about three or four of these and they are great for kids to make and eat - my son chowed through 4 himself. Really tasty, super thin crust from the tortilla lends itself so perfectly to crisping up as a mini-pizza. Give it a whirl.

Old school good stuff. The pizza stone makes it. Whoever has a pizza stone is the real deal.
Luckily I'm still on my tortilla kick. It's like the poor man's pizza for those who don't want to deal with pizza dough. Woohoo...tortilla pizza for dinner.

Sometimes you want to spend less time on cooking but still crave something nice and tasty! I just told my kids yesterday about how I as a student made a whole meal out of pancakes (the thin big Nrowegian ones) Main course:Pizza-pancake with the tomatosauce, cheese, spice and salami, and then Dessert: pancake with jam and icecream. easy-cheesy!

This is great, too, because no messing with the dough. You can have a quick pizza anytime with ingredients on hand.
Tortilla pizzas were one of the first things I learned how to make too :) I love the thin crispy crusts.
Oooh - I just got a pizza stone and I have all those ingredients in my house. This will be making an appearance on my dinner table soon!
I know what to do with the tortillas that have been hanging out in my fridge!

Good idea-I never thought to use a tortilla for pizza. If it's crispy, I will though!

Gonna have to try it. My 25 year old idiot brought me some 12" flour tortillas that stick together something fierce, so maybe this can salvage them...somehow!

lol...i like to think back to when I started cooking...man back when I was about 8 I remember watching Mr.Food avidly. For years I dreamed of putting a slab of mozerella on a tomato and toasting it the oven. I thought a toast for a sandwich was fancy. This is great though. I betcha my girls will love them.
and don't you know these get made A LOT in my house right on the pizza stone. fast and easy

my favorite part about these pizzas is how crispy that tortilla gets with all the gooey cheese. combo from heaven!

I am trying to tell this secret to my nephew...
Even in all of my sucky college cooking days I never made a tortilla pizza. And I'm not sure why. Because it would be the easiest lunch ever. And one of the tastiest.
