ranch eggs two ways
Huevos rancheros basically means "ranch eggs" because they were usually made with what was around and that was usually beans, chile and tortillas. It is by far one of my favorites to eat and to serve.
I like flour tortillas.
Others like corn tortillas. Besides the subtle difference in the tortillas the flavor is the same - great!
Every now and again I enjoy a steamed fish, its light, tasty and packed with nutrients.
I put a few slices of white onion and poured a little fresh squeezed orange juice, salt and black pepper. Picked apart with your fingers is the only way to roll.

Holy huevos rancheros those look delicious! That is my favorite breakfast dish of all time - thanks so much for sharing:)
Cheers!
Stephanie
OMG! Those eggs are just so fantastic! I love anything eggs:D
Two equally appealing meals. Is it crazy to want fish and eggs at the same time?
this is the first time I am hearing range eggs- is it similar to poached eggs on another dish? I love eggs- so this looks like another great way to use them!
I love eggs and a nice twist from plain poached eggs (which I love)! thanks! maria!
I've never eaten huevos rancheros. Ever! Am I missing out?
The eggs look sooooooooooooooooooo fabulous!
stephanie: it is mine too
jeannie: arent they the best!
jenn: fish and eggs - in my world they work together fine!
daphne: it is poached eggs with southwestern flavors
food: I should change this blog to a poached egg blog -
jojo: you are totally missing out
angie: thanks - they are so good its hard to stop at two
Me gusta los huevos rancheros...how do you get them to look so puffed up and perfect?
joan: its all in how you put them in the water (with a little white vinegar and salt)- swirl the boiling water around with a whisk and put the eggs in from a cup - I do two at a time - the swirling water causes them to fold over themselves creating the quenelle shape
You with your poached eggs. All the yolky goodness.
Oh. Yes. Please.
I mentioned in a previous how enthralled I was by a photo of poached eggs. I'd like to think this huevos rancheros were for me! ;-)
Keep 'em coming!
Could I have possibly made more grammatical errors in that last comment? I don't deserve these eggs.
How creative...must try this...my son loves eggs!
I like my eggs calmer (translation: more bland) in the morning. I guess it's all in what you're used to, right? Either way, your photos are always delightful and drool inducing!
do you like pickled eggs? i crave them so much.
You've got me... These "Ranch Eggs" are just mouthwatering!
I'd go for the first one. Yum! Great poached eggs. I need to practice!
I'm with you, I like the flour tortilla's best. I made chorizo and scrambled eggs for breakfast this morning but was out of tortillas so I served it with Mexican Corn Cakes. Yummy!
you consistently poach better than anyone I have ever seen..
Nice, huevos rancheros are the bomb. Now that I'm eating fish I've been meaning to do some steamed.
Okay, I am all over the ranch eggs with CORN tortillas :D, but please put the fish away, it's staring at me! :D
Those huevos rancheros look awesome! I'm going to have to pass on the fish but it does look beautiful :)
clearly we were separated at birth ... rancheros and whole fish ... can't beat it.
Both look incredible. I need a tutorial on how to poach eggs as beautifully as you do.
One thing I have never done: cooked a whole fish.
But eggs? Eggs I can handle. Looks delicious.
The eggs and the fish...both look gorgeous. I am such a trout addict. Loved the way of favoring it up the way you did!
Christo you make the most beautiful poached eggs ever! I need to master this technique!
and I have never had whole fish but your presentation has my mouth watering
These gorgeous photos have inspired me to try the traditional method of poaching (at last).
I've never been very crazy about huevos rancheros because they always use refried beans where I'm from. Yours look a lot more appetizing with whole beans.
We love some huevos rancheros! yum yum! Yours look delicious!
I'll take two orders of those huevos. Fabulous yummy photo.
Love huevos rancheros, but I love "bayd bel-banadoora" more ! basically the Lebanese version of huevos rancheros!
What can I say? food is our identity, no?
Looks GREAT.
Damn, I would've bet money that you entered the Culinary Smackdown this time :(
wow the huevos ranchers look delish! like something i've never seen!

I will definitely take a plate of those huevos rancheros. I have been craving something like that lately and yours look delightful.
Those eggs sound awesome for my dinner tonight!
I love them with chorizo..thinking of eggs for supper tonight!
I am a corn tortilla girl, and the spicier the better! Now that's how the morning should begin.
Both look great.
I love breakfasts like this with beans and eggs. Especially with a runny yolk and the beans make me feel like the cholesterol is being taken care of! My Cauldron Boy would love this too...
This is one of my favorite breakfasts! Sans the fish though. I know its healthy but even on a sober stomach, fish isn't my friend in the mornings!
Man, I could eat those eggs all day. I'm hosting another brunch on Sunday, but am worried I'd put off my crowd by serving something like huevos rancheros.
What a pain to poach 20 eggs...you think I could bake them in the beans or something?
Those little puffs are beautiful.
I think eggs are the perfect food.
I like to eat fish with my hands....no better way.
yep flapjacks are granola use Brits just have different words, oh I want the fish, love whole fish like that
thanks for the kind words on our baby lol
My gosh...look at those poached eggs....my favourite! I just love all the gooey yolk....mmmm. Your meals just look so good.
Ooops....pressed the wrong button when I commented above. So sorry.
