ceviche



Ceviche is not spontaneous in the least, this is a dish you have to think about and prepare well in advance. I like this refreshing summer dish year 'round but it is especially good in the morning as a fresh and exciting breakfast. I know this may not be for everyone and believe me when I tell you the flavors are bold but it is so clean tasting.

To do:

1 pound of cleaned shrimp
1/2 pound bay scallops
1 large grouper filet (any fish will do)
1 pound squid tentacles (you can use the whole squid I just like how the tentacles look)
6 large limes squeezed for the juice
1 large lemon juiced
1 large bunch of cilantro chopped
3 large scallions chopped
2 large anaheim chiles chopped (any spicy chile will do)
half of a large onion chopped
2 large tomatoes chopped
salt and pepper

Combine everything in a large bowl or plastic covered container and let it sit 12 hours or so in the refrigerator. After you can wait no more serve on crackers, corn chips or fried crispy corn tortillas, you can use additional hot sauce if you like, I like the brand "Valentina" for something like this.



Crispy corn tortilla, perfectly seasoned seafood = delight.

The ceviche looks awesome... I eat mine with crispy corn tortillas too! I usually make a big bowl of pico de gallo, mix in the seafood and serve ripe avocado and lime wedges on the side with the tortillas. Add an ice cold beer and I am good.

I do love ceviche not in the early am unless it's served w/ a spicy bloody mary and I'm game for anything, anytime.

I've never eaten this, after reading the recipe and looking at the photos, I think I'd like it. It looks and sounds really good.

Wow,
We eat a ton of fish on Christmas Eve.It is mandatory in our family to have at least 7 different fish dishes.
This recipe would pound out a whole bunch. Looks fab.

Marinated that long? Goodness me. Not sure if I'm gamed for that but seafood on tortilla sounds like a good idea.

You are a man of the sea Le Chien! This I'll admire it, and watch it, but it just may be a little to fishy for me! Can I just sit on the side, munch some tortillas, and a few of those prawns maybe?

Anything with scallops and/or Squid Testicles (which is how I read it the first time. Don't ask me why) makes me run for the hills!

I'm sure my husband will eat tons of this as we head off to Peru. There are something like 300 cevicherias in Lima alone. (Hope they have a veggie version, but somehow, I doubt they will ;)

michelle: the squid was not pre cooked but I boiled it a bit to give it a head start

pink: I like strong breakfasts sometimes...congee is one

Makes me wish I'd tried the ceviche in Peru...but we were a tad too far from the coast for me to feel safe with it.

I've never made real ceviche. Just a quick and easy version. This looks so good!

Did I tell you that I'm planning a trip to NYC in September? That would be cool if we could have a New York blogging meeting, ha ha. Going to visit some culinary schools, plus I have other stuff on the agenda.

It looks very tasty, something I'll surely try to prepare. Although I eat plenty of "frutti di mare", I haven't tried this combination.

ceviche has got to be one of my absolute favorite ways to enjoy seafood!! especially when it's this hot out, the citrus infusion sounds so refreshing - great job!
