back in the saddle


Some fantastic products arrived at my door the other day and while I sometimes get things that are a little challenging to create recipes from, this one is going to be the most challenging by far. Seriously, who wants to make lame dishes with good truffle oils, porcini oils, truffle butters and truffle honey? daRosario offers organic oils, butters and honey made with only the best ingredients, so I have my little thinking cap on and I am going to make some napoleons with polenta and wild mushrooms, I will make some kind of seasonal fresh pasta, maybe a ramp pasta or some other spring veggie. I will have to make something out of fiddlehead ferns, something with early peas and snowpeas, I still need to grill that Permit and thats where I am now. I am still in the planning stages it could all change when I hit the markets. If you have any ideas or requests or suggestions I am open for anything.

oh god Dog, when I come to NYC, please don't make me eat salmon!!! We gotta get together, ok? Memorial Day Weekend...you name the place and time, and I will be there with bells on!!!!

Oooh, lucky doggy! Such a lovely assortment of products. Sweet! Personally, I'm giving my vote to that polenta napoleon ... I'll be on the edge of my seat waiting to read about it. Yum!

diva: the polenta is gonna be good but I have a seasonal veggie gnocchi in mind that just might beat it...

We made ramp risotto the other day...it was great. Can't wait to see the finished dishes...plural, I hope!

Free goodies!!! I will think in something simple to make the truffle flavor be the star of the dish.

black truffle butter goes wonderfully with beef...or in mac and cheese. (my doctor is always bragging about her truffle oil mac and cheese) I'm really looking forward to what you come up with with these beautiful ingredients!

Shut up! Is that white truffle butter I see???!!! You are so lucky. Before I left the restaurant world my addition to our truffle tasting menu was a white wine poached pear, sliced and bruleed. On top was white truffle ice cream - basically a vanilla ice cream with chopped white truffle folded in. Truffles are to die for and I am so jealous you got all that stuff!
