spell comfort


E. n. c. h. i. l. a. d. a. is one good way to spell comfort, I can think of many others but this spelling leaves me comforted. As you recall I make these oh so often but I havent made them in a good while so it was high time for some truck stop flavor.



Directions are simple: layer corn tortillas and chile and cheese until you have all the layers you want and top with lettuce, onion, tomato, easy eggs and more chile. Thats right, underneath those eggs are 4 layers of corn and cheese and green chile goodness.



Now my kid spells comfort: P. i. z. z. a. What kid doesnt?

lol, I'm going to go have some p.i.z.z.a. in about 10 minutes...

Enchiladas look slamming, though. I love eggs added onto everything.

I LOVE eggs, but I can't eat them. But sometimes I tend to force myself to forget that, eat them, and then I'm sick the rest of the day.

But I do love some P.I.Z.Z.A.

Enchiladas and pizza are both my comfort. I can't decided between the two on which I like best. Though I've never had an egg with my enchilada before. Or one that's sunnyside up.

healthy: I grew up eating them this way....

duo: I can see that - enchilada sounds like ensalada which is salad so lets just call it a corn tortilla and egg salad

c.h.i.l.l.i & c.h.e.e.s.e (burger) w/ p.a.s.t.r.a.m.i - YUM-TASTIC!

but your version works too :)

My first experience with enchiladas was about 2yrs ago when we stayed overnight in Puerto Rico prior to our cruise. The hotel we stayed at had it on their menu.. gave it a try - loved it.
