grillin' without a license

k busted, but I do have a Permit, bah dum dum. I finally got around to hookin' that baby up and I need to tell you - its good.



The texture is firm the flavor is mild and, get this, citrusy, yeah you heard that right - this fish has a slight lemon tang to it that is very pleasant. I am glad I took the chance on this fish, it was unusual for the market and I rather doubt I will see it again, it tastes like chicken!




Criss cross fish (I know I said I didnt want to grill it but I couldnt come up with anything better) a little sweet potato, a little pea puree, a drizzle swirl of acacia truffle honey and all hands have been dealt.

Awesome hatch pattern on the fish! You're making me jealous that you got to grill out tonight. The fish looks awesome.

Oh, this Permit fish looks like Silver Pomfret.

We've been waiting for Permit. (I skip the "the" because I like to think of him as Permit Petterson) Was the texture like red fish? kind of meaty?

Truffle oil and truffel honey is rocin in Christo kitchen... When I see this fish I remember your fishing expedition pic that you sent me :).. Slurrp slurrp I am feeling hungry again...

Ocean fish always seem to be firmer than fresh water fish.. I guess it's because of the currents and tides...Looked good!

Great use of truffle honey. Must have been delish with the carrots too! The fish looks amazing, but I know I won't find Permit here.

buff: this fish was not like any fish I have had before - it wasnt cheap - this one fish was 8 bucks

I truly believe that fish, just about all kinds, should be grilled on the grill. I mean it just cooks perfectly you know? Well, obviously you know. Looks good Dog!

jason: I am going to scour Chinatown until I find another - they had several the day I got it but I havent seen them since.
