Posole



There is no right way to make it and the only wrong way is if you dont like what you made. Everyone I know who makes posole claims that their way is the best, me included. The variations for posole are many. Some make it with chicken rather than pork; some prefer to use vegetable protein rather than meat. While posole in Southern New Mexico is always made with red chile, it is not uncommon to find Northern New Mexico posole made with green chile.

Ingredients for Posole

12 dried long red chile pods
5 lbs. Boned pork roast cut into 1" cubes
2 lbs tripe (optional) Tripe alone is called Menudo
4 large pigs feet (optional)
1/2 head of garlic peeled and chopped
A large pinch of Mexican oregano
1/2 of a large onion, chopped
16 ounces dried posole or hominy
Salt
(Posole is different from hominy, another kind of processed corn, which tends to be softer and more bland. Compared to hominy, posole’s flavor is intense and earthy, its consistency more robust. Since posole corn can be difficult to find, hominy is often used as a substitute in posole stew)

Preparation
Break open the chiles and remove the seeds and veins. Put the chiles to cook in a medium sized pot. Cover with fresh water and gently boil until chiles are very soft. Let the mixture cool and using a favorite method, blend the chile and the water with a clove of garlic and some salt and oregano to make a thick smooth liquid.

Meanwhile, put the cubed pork, oregano, garlic, onion and salt into a large heavy pot and cover with water. Boil meat gently for 30 minutes or more. Meanwhile boil the corn in a separate pot with salt until it pops open. When the meat is soft, add the corn and cook for 15 to 20 minutes until the mixture is boiling nicely.

To serve
Ladle the posole into heavy bowls and serve with thinly sliced cabbage and radishes, quartered limes, oregano, chopped onion, avocado and fresh corn or flour tortillas and generous spoonfuls of your chile sauce. Besides these side dishes, posole is usually served with sodas or cervesas.

Thats what I'm Talkin' about

Every couple of days my mom would whip up a few dozen tortillas.


The tortillas are eaten with everything and even made into chicharone burritos, this one is red and....

this one is green, both covered in cheddar cheese.


The holidays are also a time for tamales and this one is smothered in red chile and cheese. Since we ate a lot of the same things over and over again at every house we visited I didnt document the food that much. When you grow up like I grew up you get two choices:



Red or,



Green.

Adore Galore

I have over 300 photos from our little excursion to New Mexico, Banana has about 400 and the Pup has around 200 so I have been mentally sorting through them to only bring the highlights, its not easy. We drove about 100 miles everyday in search of whatever it was we were searching for; and whatever it was we found it still didnt stop us from going ou the next day. It should be taken into consideration that my parents house is 30 miles from Albuquerque so going there and back is 60 already.

Rio Grande Gorge. This was scary as the bridge would vibrate and wiggle a little when the semis would pass and the narrow walking path on both sides was slightly elevated about 10 inches and covered in frozen snow.

The snow was in the mountains, in the valley it was nice enough to catch these big catfish. I fileted them breaded them and fried them and we ate them so fast you will have to imagine how good they looked and tasted.

Where was I

Oh yeah it was right after we saw buffalo, but anyway on a side note I am gunning for 365 posts this year, one a day lets see if I can hang with the big boys and girls. I finished off last year with a paltry 178 so I gotta double my efforts. One funny thing is In NYC people can totally tell I am not from NYC but to make that even more funny is when I am in the place that I am from people think I am from somewhere else...cracks me up but it only means I get to play the tourist all the time. so we visit like good visitors should.



This is our gangsta rental and boy I am telling you this car was like a parking guru no matter what we found a spot right in front so much that when I was around my local friends they comented on my parking locales...gangsta baby



As we got more north it naturally got colder.



We stopped in Espanola for lunch. Espanola, New Mexico is the brunt of all jokes. For example - why did they have to cancel sex education and drivers ed? - the mule died....bah dum dum. Anyway we ate at Ranch o casados since the banana and I are casado (look it up)



We ate Fajitas and Sopaipilla tacos.



Scenic vistas later and after the police incident I mentioned a couple posts back.



We end up out here.

We finally get to Taos after 7 hours on the road but we did stop for breakfast and lunch and even though we went the 75 mile per hour speed limit we still took our time.



What? Enchantment starting at $50 bucks....we're in.

Leaving on a jet plane

I dont know when we'll be back again, but we do get here annually lately so we shall see. My New Years Resolution is a simple one : lose 15 pounds. Now that seems simple but it involves far less beer and far more excercise and that is where the difficulty comes in. I can do it.

January first is my anniversay of moving to New York City. This year marks the beginning of my 23rd year -
WOW where DID the time go? My memories are fresh even though my flesh is is not.



My last (and third) post from sunny New Mexico.

We arrived on Saturday the 15th, we relaxed on Sunday and on Monday morning we hit the road heading for Taos.

First stop Barelas Coffee House an Albuquerque insititution that is only open for breakfast and lunch.



We had Posole and Menudo.



Then it was on to the three hour drive.



A stop in Santa Fe to admire the ristras.



And other typically Santa Fe views.



Buffalo, HUH?
