I have to admit I was a little stumped by this months CCC (Creative Cooking Crew) challenge. I had no idea what I was going to do and I had no idea how I was going to do it. I thought of all kinds of things to try to come up with 3 different dishes using one ingredient. I thought about figs and how I could use them with pork chops, I thought about pineapple and how I could use it on pizza, I thought about watermelon and how I could use it with feta - I pretty much thought about all kinds of things and how I could make a savory dish out of something sweet. Then it hit me as I was picking tomatoes from my garden plot here in the Lower East Side of Manhattan, NYC.
What a perfect ingredient - I would use tomatoes and I wouldnt make three different dishes with the tomato I would make one dish and use the tomato 3 different ways. I would use green tomatoes and sundried tomatoes and yellow tomatoes and cherry tomatoes and plum tomatoes and I would make three different things that will all go together on one plate.
What I did was make fried green tomatoes on a fresh sauce of plum tomatoes and basil served with a fresh tomato relish and then topped with a sundried tomato chutney, oh, and I snuck a little bufala mozzarella in between the two fried green tomatoes for a little extra oompf- so I guess I cheated and used the tomatoes 4 ways instead of 3 - oh well.
It was super good and a perfect lunch - I like a light lunch since I have to stay busy during the day and I dont like to be weighed down. Check out what the others are doing and thanks again to Laz and Joan for hosting.
