hi protein

Eggs are the best bang for your buck! I am forever pushing the virtue of the egg. Loaded with omegas and alphas and tri-delts its a virtual sorority of goodness, heck why not throw in kappa kappa gamma just for fun. Load the egg up with summer booty and look out - polypeptides unite!

After getting a little summer garden bounty and some farm fresh eggs from my egg lady in Woodstock I couldnt help but want to have an omelette.

Squash blossoms, avocado, onion and cream cheese omelette with a side of fresh tomato. Lunch in my book, breakfast according to the manual.

It'd probably be good for dinner, too!

Looks great--love the addition of squash blossoms, which I never knew you could eat until I started reading your blog.

There's nothing like fresh farm eggs. Their yolks are gorgeous, almost an orange color compared to grocery store eggs. What a great looking omelet. The squash blossoms are very French - we saw them in their farmers markets and they are beautiful.

Oh I love eggs! Eggs are so versatile and they are good in any form, in any kinda dish, for me! Have you tried Chinese tea eggs before? How about Century eggs? Hehehehe

I've got omelets on the brain too. Stopped at my favorite little egg farm while in CT this weekend and I'm itching to cook those babies up. I like tomato, chive and Gruyere in mine, but the squash blossoms are an especially nice touch.

what the heck is a tri-delta gamma gamma?
do you know the freshest and organic eggs taste so good they should never need salt.

You're so right about the cheap protein that eggs offer. So glad to see you stuck some squash blossoms in there too! And you are so witty to boot.

tavolini: or even a snack! I could send you some canned squash flowers - no wait you were going to send me stuff - how about ariquipe - you can find that easily in Columbia -

nora: yuppsie daisies

carolina aka sam: thats so true about the yolks - I grew up on a farm so I really appreciate these eggs when I can get them...I love france!

kennyt: I have tried the century eggs but I cant get past how they look - never heard of the tea egg

jenn: your pasta got me in an egg mood

melody: you are very welcome

diva: stretchy cheese, for me, doesnt work in an omelette..but I love gruyere - for the same kind of kick try comte

dawn: its all greek to me...I had not noticed the salt thing - I like how salt alone can wake up an egg

linda: I often put them in omelettes before anything else -

danille: appetizer too - maybe - little mini omelettes

hema: its the mysterious squash flavor that comes from the hidden blossoms - thats what it is!

Eggs are definitely up there with my favorite foods....I make a frittata or quiche once a week, so I have breakfast waiting for me every a.m.!
