Stuffed Mushrooms on the Ides of March

Way back a long time ago I had a girlfriend who had a sister who loved to make stuffed mushroom caps. I was but a child of 17 and her sister was a worldly woman of 23 so stuffed mushrooms were a bit exotic to me at the time, not to mention the glass of wine we had to wash them down.

While I have never made these myself, even though I helped make many, I feel experienced, so when I was trying to figure out what I was going to do with these lovely cremini mushrooms I blankly remembered the jar of crab I had in the cupboard, a jar I received from Asian Grocers, and stuffed mushrooms was the only answer, really, there were no other suggestions so I went with the flow.

The mushrooms were prepped.

The filling was made with a combination of cheeses, crab chips, the chopped up stems, a big spoonful of the crab and an egg.

Baked at 400 for a few minutes and these little mouthfuls were all flavor. I think I need to revisit the stuffed mushroom cap and create a few twists on this timeless classic. Its going to be a big week, blogfest .1 - 2010 coming up on Friday, promotions throughout the week, get some sleep and take your B vitamins if you plan on keeping up.

I'm still stuffed from dinner, but I think I can squeeze in a few of these. These would be perfect appetizers.

Stuffed shrooms used to be my go to appetizer when I was 17. They are very retro.
I love them with spinach and cheese, and your crabmeat stuffing looks delish. Who wouldn't love these?

Oooh, with crabmeat no less!! That is a great idea!

It's funny--first time I had stuffed mushrooms, they were cooked by a boyfriend. I was so blown away by his culinary capabilities that I didn't notice that the mushrooms were the only thing he served for dinner ;)
