ranch eggs two ways


Huevos rancheros basically means "ranch eggs" because they were usually made with what was around and that was usually beans, chile and tortillas. It is by far one of my favorites to eat and to serve.



I like flour tortillas.



Others like corn tortillas. Besides the subtle difference in the tortillas the flavor is the same - great!



Every now and again I enjoy a steamed fish, its light, tasty and packed with nutrients.



I put a few slices of white onion and poured a little fresh squeezed orange juice, salt and black pepper. Picked apart with your fingers is the only way to roll.

this is the first time I am hearing range eggs- is it similar to poached eggs on another dish? I love eggs- so this looks like another great way to use them!

joan: its all in how you put them in the water (with a little white vinegar and salt)- swirl the boiling water around with a whisk and put the eggs in from a cup - I do two at a time - the swirling water causes them to fold over themselves creating the quenelle shape

I like my eggs calmer (translation: more bland) in the morning. I guess it's all in what you're used to, right? Either way, your photos are always delightful and drool inducing!

I'm with you, I like the flour tortilla's best. I made chorizo and scrambled eggs for breakfast this morning but was out of tortillas so I served it with Mexican Corn Cakes. Yummy!

One thing I have never done: cooked a whole fish.

These gorgeous photos have inspired me to try the traditional method of poaching (at last).

I've never been very crazy about huevos rancheros because they always use refried beans where I'm from. Yours look a lot more appetizing with whole beans.

Love huevos rancheros, but I love "bayd bel-banadoora" more ! basically the Lebanese version of huevos rancheros!
What can I say? food is our identity, no?

I love breakfasts like this with beans and eggs. Especially with a runny yolk and the beans make me feel like the cholesterol is being taken care of! My Cauldron Boy would love this too...

This is one of my favorite breakfasts! Sans the fish though. I know its healthy but even on a sober stomach, fish isn't my friend in the mornings!

Man, I could eat those eggs all day. I'm hosting another brunch on Sunday, but am worried I'd put off my crowd by serving something like huevos rancheros.

What a pain to poach 20 eggs...you think I could bake them in the beans or something?
