How meaty does that sound? Lambs quarters... might as well say chicken pieces it all sounds the same. Why is this wild herb named 'lambs quarters' it is also known as 'goose foot' which seems more appropriate, it looks like a goose foot. My grandmother 'turned me on' to this weed when I was a kid. I eat it like I eat all the other wild things I learned about. You should too. Just look around!

I made spinach pies with this, lambs quarters. I took a bunch of the veggie and sauteed it with some garlic in olive oil and salt. After it was a little wilted I let it cool. Cooled I mixed in some ricotta and parmesean and more black pepper. This was the filling that I put in some thawed and rolled out puff pastry and then baked till they looked like this, these have cooled, and they were'nt the best batch.
