pasta





I made a delicious pasta dough with some of the mushrooms and then sauted some more with ramps.



My chile delivery has arrived, I will be sending out little samples so be prepared.



Pasta 'rags' with a mushroom ragu.

In a food processor I combined semolina flour, the young stems from the mushrooms, a little salt a little olive oil and an egg to make a dough. Rolled out the dough with the pasta machine and tore the sheet into rags. For the ragu I sauteed some onions and garlic in olive oil until translucent then I added some oregano, salt, pepper and a pound of mushrooms. I let that saute a bit then I added some crushed tomatoes and let the whole thing simmer for about an hour. Well simmered I took the immersion blender and pureed the whole thing into a veggie ragu. And thats that!

if it's pasta....I'LL EAT IT!!! PLUS mushrooms???It don't get any better....

beth: nope not much better than pasta and mushrooms...except maybe some cream sauce....

dana: I dried all of them to use as I like....

pinknest: a pasta machine costs the same now as it did many years ago...I have had this one forever...it is a nice thing to have if you like pasta..I did have the ravioli attachment way back when but I ditched it since it was clumsy and raviolis are easier to make without it.

i've always wanted to make homemade pasta. seems intimidating. your recipe sounds delicious. did the flavor of mushrooms come through strong or subtle in the pasta?

Looks absolutely divine. Homemade pasta is fabulous, and the fact that you got so creative with your mushrooms, even better. That chile looks divine as well, my tongue is curling from here. ;) You are God, do you know that?
