Wierd independence this one - it is the revolution that happened in Puebla against the French, I dont know what was won and what was lost but it is cause for celebration. 4000 Mexicans beat 8000 French in 1862. A completely regional battle. Why should I type it all in when you can read about it here.
So in honor of this battle I had a tortilla burger. Thats right a big pattie of hot cooked beef, lettuce, tomato, roasted garlic, green chile, cheese, mustard and mayo wrapped in a hot fresh tortilla.

Had myself a taco meat, cheese, hot salsa wrap for dinner.. if Maximilian would have prevailed, I might have had a crepe, or strudel!

That looks dIvine! Better than the plain ole burger I planned for supper. I may have to whip up some bread in the crock pot for my burger and eat late cuz of you. Dang it. Being GF sux sometimes.
