W
ell these are more like highballs, asparagus, cucumber highballs that is. Last night, right before falling asleep and wondering what to do with asparagus and cucumbers, I came up with the idea of putting the soup in a cucumber 'glass'. You see, I have been noticing so many delicious cold soups lately both around the city and around the web that I wanted to make some too. Asparagus are all over the place right now so asparagus have to be part of the mix. I scooped out the cucumber and left a shell for the 'glass' the scooped cucumber went into the blender with some asparagus stems -saving the tips for garnish. Making up recipes based on flavor pairings can be easy (strawberries and cream) and most often it can be difficult (curried raisins), in this case it is a little complicated. Should I make it a spicy sweet soup or a mild and savory soup that refreshes?

Cool curry cucumber soup.

Frickin' beautiful.. Whoda thunk that one up, but you!

Interesting combination! I can imagine the curry and cucumber but not the asparagus in with those two. Is there dairy in the soup?

buff: thanks bud...

maggie: no, I used silken tofu to get a creamy texture - I wanted to make something with avocado but my avocados are like hardballs - you taste the cucumber and the curry but the asparagus gets a little lost...

I had a typo so I had to delete my comment, I know how it bothers you so..the soup, creativity, combination is very impressive!

great idea! I think I'll use it with smoothies when the weather gets a bit warmer...freeze the cukes a little...very inspirational indeed!

wow--I was floored by the color in that first photo.

My favorite soup is one that I have never replicated. It was a hot cucumber soup made by a bar randomly called Bronx Bar on 2nd Ave in Detroit (circa 2000). Your soup is similar--yet chilled? You mentioned curries, asparagus and cucumbers...I'm won over!

Your presentation is on point. So, it was excellent?

(how about the asparagus pee factor? is it apparent?)

Christo Gonzales said...

michelle: frozen....good idea

selba: sip or slurp?

5 star: utensils....

tavolini: huh? my pee? I eat so much crapatonia that if my pee isnt yellow I think I am drinking too much water...

Very elegant indeed! And it looks so refreshing, I can truly picture myself 4-5 months from now, under my cherry tree, avoiding the hot sun (she said optimostically) nibbling absently on the asparagus and sipping that soup!

I just made a creamy avo soup. I have them in abundance, saw the recipe and decided to try it. It was delicious. I have two bunches of asparagus - I'm going to make your soup tonight. It sounds amazing. I don't have any tofu - do you think I should substitute cream, or just leave it out?

Christo Gonzales said...

anette: I think you are living in the same fantasy world as me...

belle: you can substitute heavy cream, or cottage cheese and even sour cream

jill: I will write the recipe especially for you...

beth: lets see how do I describe the taste of grass and make it sound good....hmmmmmm - yup steam or saute in butter and then pour hollandaise over....

Absolutely stunning, doggy. Just gorgeous!

Personally, I'd opt for spicy but you've presented it so beautifully it doesn't much matter. :)

Christo Gonzales said...

TBD: the little red specks added a nice sweet pepper crunch

donna: thanks a lot and do try it and let me know what you think

gustad: hey there, welcome back and I did go check out the hydroponics

diva: thanks diva and it is a little on the spicy side - I use hot curry...
