Well these are more like highballs, asparagus, cucumber highballs that is. Last night, right before falling asleep and wondering what to do with asparagus and cucumbers, I came up with the idea of putting the soup in a cucumber 'glass'. You see, I have been noticing so many delicious cold soups lately both around the city and around the web that I wanted to make some too. Asparagus are all over the place right now so asparagus have to be part of the mix. I scooped out the cucumber and left a shell for the 'glass' the scooped cucumber went into the blender with some asparagus stems -saving the tips for garnish. Making up recipes based on flavor pairings can be easy (strawberries and cream) and most often it can be difficult (curried raisins), in this case it is a little complicated. Should I make it a spicy sweet soup or a mild and savory soup that refreshes?

Interesting combination! I can imagine the curry and cucumber but not the asparagus in with those two. Is there dairy in the soup?

maggie: no, I used silken tofu to get a creamy texture - I wanted to make something with avocado but my avocados are like hardballs - you taste the cucumber and the curry but the asparagus gets a little lost...

My favorite soup is one that I have never replicated. It was a hot cucumber soup made by a bar randomly called Bronx Bar on 2nd Ave in Detroit (circa 2000). Your soup is similar--yet chilled? You mentioned curries, asparagus and cucumbers...I'm won over!

Very elegant indeed! And it looks so refreshing, I can truly picture myself 4-5 months from now, under my cherry tree, avoiding the hot sun (she said optimostically) nibbling absently on the asparagus and sipping that soup!
I just made a creamy avo soup. I have them in abundance, saw the recipe and decided to try it. It was delicious. I have two bunches of asparagus - I'm going to make your soup tonight. It sounds amazing. I don't have any tofu - do you think I should substitute cream, or just leave it out?
