Ok. You start by taking some dried chiles, I get mine from New Mexico -
sun baked and dried sunshine.
Throw them in a blender until smooth.
Season the chicken and pressure cook for 15 minutes while frying up at least 3 blue corn tortillas per person (extra counting seconds)
Plate it up and feed it to somebody.

That looks yummy, but do break out in a sweat when you eat it? Is it super spicy, or just mildly spicy?

hey, my kid's name is Stephen...just in case you get a call this weekend! You never know...I told him if he gets lost or gets hungry, to give you a call. he's a nice boy, don't worry...no serial killer or anything like that. But he CAN eat alot!

I bought a pressure cooker 3yrs ago, and really haven't used it enough to get good at it. You have inspired me to try it again soon.

mmmmmm, enchiladas!! Love the blue corn. Good corn tortillas are hard to come by in Ottawa.
