slow and steady wins
Risotto is a labor of love. To get creamy smooth risotto and still not have mushy rice is a skill worth learning.
I made this pancetta, scallion and dried wild mushroom risotto with quattro formaggio to test that very skill and as much as I wanted to hurry it along I am glad I didnt; oh and the 4 cheeses are parmesan, asiago, fontina and provolone (in case you were taking notes)
The risotto is creamy and cheesey with the salty bite from the pancetta balanced nicely with the earthiness from the mushrooms.

I could eat risotto everyday. I love it. I enjoy cooking it too. It's relaxing for me. I was fortunate to have my first dish in Venice...saffron risotto with huge briney shrimp...pure heaven. This is a mouth-watering post. So far all I've had today was the breakfast burrito my husband brought home from the hospital this morning. You've inspired me to break out my arborio tonight after I send him off to work another night shift...he isn't a huge risotto lover. Just means more for me!

I have this love affair going on with wild mushrooms and my absolute favourite risotto is, of course, wild mushroom. Can't beat it and you've done it great justice.
I think you just perfected the art of cooking risotto. That is one dish I have yet to conquer.

Never eaten a risotto before-I'm sure it must taste great with those 4 cheeses. Need to taste it first before I try making it at home.

Oh my gah, this risotto looks AMAZING. Man oh man, slow and steady truly does win. (Although, I'm tempted to do the "instant gratification" thing and just ask if I can have some of your risotto.) I absolutely love risotto but have never made one with all of these flavors combined! Wow! I'll bet it was amazing - slow cooking and slow savoring every mouthful. MMM. I find risotto to be the most sensuous food ever invented.
