stuff it
Thats right I said stuff it! How many times do I have to tell you that 'chile relleno' means 'stuffed pepper' I know you eat something like this at least every once in a while - dont you? I know my friend Stacy does and hers look really good and you know I have because I post about them like every few weeks. Well this time around I did not fry them - you heard me right - I baked them instead, a stuffed pepper like maybe you are more accustomed to.
I had some poblano peppers some red, peppers and some green peppers so I was stuffing like a fool and I stuffed anything that got near me though the odd thing here is 'peppers' of the 'pepper' variety are not my favorite- as much as I like chile I dont like the sweetness of these too much. I made a delicous meat and 3 cheese stuffing, the meats being a ground beef and pork combo with secret seasonings and the cheeses were, aged gouda, cheddar and ricotta, Tavolini maybe you should stop reading now, I said it and I will say it again -ricotta, sorry but I had to.
The stuffing came out great, the cheeses were oozy, the chiles had bite and the crunch from the bread crumb topping balanced it all out, not to mention the lake of red chile they swam in.

Green ones repeat on me! That's the only reason I used the sweet bell peppers.

I use Poblano Peppers all the time, in just about everything but cereal..I don't find them to be particularly sweet...don't see the red ones often, mostly green...Question: Overall, better baked or fried, concerning taste?

Honestly, those look fantastic!
There is a little restaurant down the street that does chile relleno tacos--good lord. Probably gain about 10 lbs just looking at them, but the taste is heavenly!

Hey--if you can hide the taste and texture of that nastiness, I'm all for it!
(I do try my "yuck" foods every year or so, just to make sure they haven't gotten better.)

Two peppers walk into abar de alterne...Senior Pablano and is friend Senior Habenaro...they do tequila shots all night, and then Pablano says "Hey Hab, I am going home with this ripe tomato over here"...Hab says "Why do you get all the good ones"? Pab says "You might be guay and a hot chimango, but really, they want the grande pepper" :)

Mmmmmm - I love these! I haven't had one in years since I stopped eating meat, because they're just not the same with just cheese. I might have to have one very very soon.
