a recap


T
he pasteles came out great and after they sat for a day
they firmed up and are even better.

All the flavors have had a chance to relax and find their little spot amoungst each other and the marriage of gastronomy has been consummated.

They are great I tell you and well worth all the effort.

On to other things

Snap peas, baby bells and cheese - how do you say risotto?


I had some snap peas, I have mushrooms (as usual) and I had a small piece of beef tenderloin some arborio rice and some cheese ends so I put on my thinking cap and thunk up a risotto.

Remember the picnic shoulder I used to make the pasteles? Well it wasnt finished so the rest of this will be pulled and used in sandwiches mixed with a little special barbeque sauce. I have been experimenting with all the different regional sauces out there like the mustard version for example and I am really getting a taste for these things -saucy, I didnt used to like stuff like that.

Someone on your comment is cooking? All looks good...and until my son feels better I am eating lean cuisine...a forced weight loss program for sure!

Im not sure about the banana leaf thingys - Im so technical arent I!!!!

The Risotto on the other hand - simply stunning, will you make it for me after my long trip?????

OMG!!!!!!!!!!! I just went back to re-read your post about the banana leaf things (sorry I musnt have paid alot of attention when I read it yesterday),

FOR GOODNESS SAKE THEY ARE TAMALES!!!!!!!!!!

I LOVE THEM - ITS BEEN ABOUT 10 YEARS SINCE IVE EATEN THEM.

Guess what I am making this weekend!!

Pasteles appear to be just like men.....when they firm up they are even better.

Mmmm! I like wrapped food!
The risotto looked good, but you had to name it kitchen sink risotto hadn't you!!? A picture of what lies in the bottom of my sink before I remove it keeps popping up in front of my inner eye. I use to threaten to serve it as a soup to my husband every once in a while just to scare him a little..

Those pork shoulders are versatile, and I am a sauce freak! The mustard base sauce works like mad, but is not widely popular across the country. Paul Kirk has a paperback out on BB-Q sauces that is well worth the money!

anette: now that you say it like that it changes everything - I was thinking more like 'everything in the kitchen including the sink.

buffalo: I really like the mustard sauce - tangy and bright

darius t: cheesy and delicious

tavolini: stir and add broth, stir and add broth - 20 minutes later it is ready

Had the mustard variety, liked it..maybe a bit too sweet for me...No, the red sauce with the addition of chipoltes, would have to be my favorite...Of course, a lot of that has to do where you hail from, and where I live, Red BBQ sauce is, as is beef brisket, but I prefer pulled pork....The most interesting sauce that I have ever seen is made up predominately with mostly vinegar and sugar...check it out...
Ingredients:
1 C. white vinegar
1 C. cider vinegar
1/2 C. packed brown sugar
1 tsp. cayenne pepper
1 tbsp. red pepper flakes
1 tsp. salt
1 tsp. freshly ground black pepper
1-2 jalepeƱo chilis, split (to taste, optional)
Have never tasted this, but on pulled pork, it actually may be quite good...

You know, by now, that I'm rather uneducated in the food world. So therefore, I'm not afraid to tell you I have no idea what in the hell those things are up at the top, but the Kitchen Sink Risotto
is so good!!!!! I bet I would LOVE that!
