I am not finished yet - the more you leave the more there is

Ever cooked too much tuna and ever cooked it too much? Fear not my brethren there is hope. Tuna salad made from fresh tuna is not like tuna salad you have ever had.

Take that over cooked tuna and chunk it into a bowl.

Add chopped green onion and hot house tomato and a big wad of mayonnaise.

Make sandwiches on toasted bread. Leftovers fit for a king.

Fantastic. It looks so good.

I had a tuna sandwich Friday at a deli and it looked like blended canned cat food....awful.

You are so right. Fresh tuna made into a salad is to die for and nothing like the canned stuff. It's worth it to make too much tuna just for a tuna salad sandwich. And you're right - it's fit for a king (or queen).

When we lived in the islands, you won't believe it but occasionally we had so much tuna from a catch that we didn't know what to do with it. Now that's living.

Sounds fantastic!!! I wish tuna wasn't on the high mercury list so I could have it more often...

You know, with all these beautiful leftover posts, you tempt me to cook outrageous quantities of stuff just for the ingredients.

So delicious! I agree - tuna salad w/ fresh tuna puts the canned stuff TO SHAME!

You are definitely on to something here. I think I am going to buy some fresh tuna and over cook it just so that I can make tuna salad. The tuna from the cans are too blah.

So much better than anything you could find in a can. This is beautiful. You keep doing this, you may never touch a can of tuna again.

I would love this sandwich.
