devil business
The perfect deviled egg is just that to me - a deviled egg, no fancy piping no exotic ingredients just plain simple egg yolk, mayo, dry mustard, yellow mustard salt and pepper. While I have made them with crab meat before and while these were absolutely excellent nothing beats simplicity. The real trick in my book is the perfect boiled egg. Everybody and their grandmother has a method to boil eggs and and none of them work for me like mine does. I dont like them to be green and bouncy, I like the yolk fluffy and bright and just set. I leave the eggs out to get to room temperature. When I am ready to use them I cover them with water in a saucepan so they are just submersed and then put to boil. When the water starts boiling I let them boil for a solid 5 minutes. When the five minutes are up I let them sit for two minutes before running ice cold water over them until they are cool enough to handle. Peel under running water and slice in half separating the yolk into a separate bowl to be mixed with mayo, dry mustard, yellow mustard, salt and pepper. Finely smash it with a fork and then spoon the yolk mixture back into the egg white and dust with chile or paprika, and there you have a simple yet perfect deviled egg, even more perfect if you let them rest a while so the dry mustard has a chance to marry the other ingredients. The funny thing is how people will eat more of these than they would if they were just eggs!

I actually boil my eggs much the same way. I've always felt starting with the eggs at room temperature, and NOT over-cooking them, was the way to avoid the green rimmed yolk and the peeling catastrophes. But I'll admit - I have to add a bit of sweet pickle relish to my yolk mixture.
Either that's really great photography or thats the best deviled egg ever made. Well done.

oh good lord...those things are the devil to me! My husband LOVES them and will eat a dozen of them...but then you have to evacuate the house!
I was watching a cooking show the other day, and they made deviled eggs the "normal" way but then they dipped them in flour, then in a beaten egg, and then in planko or something like that....and then DEEP FRIED THEM!!!! W. T. H.?????
That's almost exactly how I do mine, but I have never let them come to room temp first. I'll try that next time, cause Lord of Beef, I love deviled eggs, and so does my whole family!
And yea, I saw the one with fried eggs that Beth is talking about! YUK!

i love deviled eggs. i could eat a dozen easily. comfort food and it always reminds of my childhood & the parents parties. I use the same ingredients and a dash of cayenne to mine. egg salad sands the same way too with butter lettuce & tomato on good soft bread. pretty picture :)
They go very fast at my family gathering! A couple of dozen.. gone in only a couple of minutes! Everyone loves deviled eggs!

My method of boiling eggs is close to yours...straight from the fridge to a pan of cold water, wait ten minutes once water starts to boil...from stove top to sink, run cold water into pan and then peel. I am a big fan of a simple "Angeled" Egg (as kids we were not allowed to utter the word Devil, whether or not it had to do with food)...I have never had it with dry mustard though! It's funny, because at any big family gathering there are at least 3 dozen Deviled (it so weird to type that) Eggs.
Mmm.Mmm. Good. Now I'm hungry for eggs.

Oooh...I'm with Dana on the pickle relish! I adore deviled eggs and you're right. There's never enough because people just keep on eatin' em!
And all pickle relish isn't sweet. I actually prefer the non-sweet!
