Huitlacoche

Sometimes spelled cuitlacoche but pronounced - wheat la coach eh - is certainly an aquired taste that I have somehow aquired. I can remember seeing this stuff on the corn in the fields and thought it was by far the grossest thing that could have happened to my sweet ears of corn, now I wish I could find it. One little can like this will set you back more than five bucks, that is if you can find it. You can make different things with it but I like it simple in a quesadilla or dolloped on a cheese omelete, it isnt a weak flavor so consider this a warning.

Corn smut. It does sound so pornographic but how else to describe this inky, milky, gooey, ooze that is so darn tasty, plus I didnt make it up.


the perils of ageing is I never got the heads up on this.....




....There's bands on the sidewalk all over my hood.

Ok, there is just something about that "huitlacoche" that just doesn't seem like it is very appetizing. How long did it take you to "aquire" a taste for it?

Hope the bands are at least descent. And I hope you are able to concentrate/sleep/eat in peace.

Man, I don't know about that one! The grossest thing I ever got off corn was some corn borers(used in ice fishing as bait!).

oh yum yum yum corn fungus!! one of my favorite ways it's referred to on menus sometimes is: mexican black truffle.

I don't really want and of the corn smut, but I would love to live in your neighborhood!! hte nusic, the smells, the sounds....all the different people..hey, I meant to ask you..were you in Manhatten when 911 happened?

yes I was beth and it was terrifying, I HAD a view of the twin towers so to see them collapse from my windows will never leave me.

Hummmmmm! Huitlacoche quesadillas. There was a man that used to make
tlacoyos when I used to live in Mexico. That my friend was a looooong time ago. Anyway he had chicharron, flor de calabaza, beans, mushrooms, and best of all huitlacoche tlacoyos, those were the best. You are so right though once you acquire the taste you'll like them forever. I love them!

I've seen little cans of huitlacoche at one of my neighbourhood grocers. I didn't realize it was corn fungus. What's the taste like? Is there anything to compare it with, or is it mostly unique?

Vincent: nothing really, it has a strong musty earthy flavor and since you like mushrooms so much you will probably like it, try iat tossed with pasta - a la squid ink-or make pasta with it as the base for black pasta
