spring has sprung
Finally I can safely say that it almost seems like Spring is here to stay and I tentatively say that with the utmost in confidence, I think. This time of year is exciting for me because it marks the beginning of my foraging forays. You might remember mushroomlandia? Well mushroomlandia is also home of berries, nettles, ferns and greens of all kinds. Oh and before I forget go and check out my mini guest post at BlackStar Gourmet.
One of the easiest and most common greens to find is your garden variety pest, the dandelion. Dandelion greens are quite tasty if you can tolerate their tangy bitterness. I like them with sauteed onions and lardons of bacon.
Man cannot live on bitter greens alone no man needs quiche. What do you do when you eat eggs like I do and you seem to have a never ending supply of those eggs and they are organic and cage free, for the most part? You make quiche, yup quiche is exactly what you do because real men do eat quiche.
Two types of quiche were made on this go around both had asiago, parmesean and fontina cheeses. An asparagus and garlic chicken sausage quiche was first up.
Ham, spinach and mushrooms rounded out this tasty egginess.
Varietal meals would not be complete without popovers and raspberry butter, sure everyone can have strawberry butter but who gets to have raspberry butter?
Hot eggy popovers with melty, melty sweet and tart raspberry butter. Bring it on Spring I think I am ready!
Time to start voting on The MarxFoods dried morel throwdown, I made trout.

Spring has sprung indeed and you celebrate it so well!
dog i'm with you on the raspberry butter, but i'm not with you on the weed salad man. no no. no hate, just love
wow, beautiful dog!
I love greens, and the quiche was very nice; but DOG, I am crazy about popovers and the raspberry butter sounds extraordinary!
oh wow adore quiche and never thought of making dandelion greens, looking forward to your mushroom posts
Love everything but the dandelions (they are too bitter for me). Do you ship the popovers and raspberry butter?
cynthia: thank you so much - we sometimes do get to have spring in NYC
dawn: weed salad - that actually makes it sound more appetizing to me...LOL
snugs: thanks snuglet
vickie: the raspberry butter is not at all the same as strawberry butter - you would be surprised
CandC: I hope I can find some mushrooms this year - all my spots last year were minimal and the bugs got to them first
bunky: bitter they are - you have to really need vitamin k and iron to like them - but kale does that to me too so somes greens is bitter - now shipping popovers and butter sounds like a great idea.
Well, then, you need to try my cheeseburger quiche. It passed the manly-man test in my house, I assure you. I've been meaning to try popovers, and one of these days I will.
There are baby chicks and strawberry plants at my Agway. They think spring is here, too. I'm hoping!
What a beautiful quiche..mmmm...
When I had parakeets I used to feed them with dandelion leaves, but I am still a little afraid to try them myself. Thank you for the encouragement ;-)
I think it has been confirmed that Spring has arrived in NY.
Your popovers looks awesome!
One post, chockful of good stuff! I read your Blackstar Gourmet post - excellent! Poaching is my new favorite way of preparing eggs, although quiche is an extremely close second. The ham, spinach and mushroom one looks like a full meal!
Yes, glad to see real men DO eat quiche. And bravo to you for eating dandelions. So much good food is just free for the taking.
Hot diggity dog, that is one stand up quiche. And I'm getting a real dandelion tingle here... I saw them at the farmer's market this weekend to save me foraging in the park...
I love the colors of your quiche!

You and your eggs. I think I love them just as much as you. I made a great Hollandaise sauce last night. Eggs from my friends backyard chicken coop. Isn't that the new thing. She named the chickens so I named the eggs.
I'm not going to be able to stop thinking about this quiche - must make it right away for lunch!
Both quiche(s?) look absolutely delicious! And popovers yummmm!! I voted - good luck!
Wild edibles right in your backyard! Can't wait to see the morrells you discover!
wow, everything looks amazing. but that popover with rasp butter is the icing on the cake.
no better way to kick off spring then these gorgeous dishes!
Popovers? are they related to cousin yorkshire pudding from UK?
My mum used to make wine from Dandylions! It was very good! (they said, I was just a kid)
I like quiche! I wish others in this house did!
I'm totally craving quiche now.
Mmm, popovers! Actually, it all looks good, but I'm especially fond of popovers!
Off to vote for you ...
Those quiches look pretty darn good but it's the popovers I'm wanting right now. I love popovers. Oh I'll eat dandelion greens too, why not?
I made an asparagus leek frittata this weekend....spring has definitely sprung.
I love that high fat quiche you got there, Mr. It is a beautious specimen!
Your quiche(s) are really beautiful -- as is the popover with the surprise filling. Great brunch items.
Wow those popovers have me! Fantastic! Now I want to make some! The quiches are great too! Meals in one! Would love to pop by for brunch! Happy spring!
and spring loooks even more beautiful with all these mouth-watering dishes!!
Those popovers look so good! And I love my greens! GREENS RULE!
I am sure the raspberry is lovely, but give me that big mess of greens and you'll really see me smile! GREG
You really know how to celebrate the coming Spring! You make it look so delicious. Dandelion greens are an acquired taste but the quiche looks heavenly!
That quiche is calling me! Love dandelions, we make them a lot in lebanese cuisine and it is so delicious with lots of onions and garlic!
Wish I was in Michigan to go morel foraging!
Never was much for dandelion salad, but yours sure looks good.
Love the photos...the quiche is unusual and I copied it. Adn I'm loving all these flavored butters I've been seeing. I much prefer raspberries to strawberries any day!
You have me craving quiche now. I've never had a popover before - I wish I had one for breakfast.
I am not a Spring person, but I do love all the greens!
Both of these are gorgeous! Great photos! I wish my quiche came out this pretty!
Wow, everything looks so delicious...nice pictures!
looks good Dog...really. and the eggy goodness is yummy!!!
Beautiful pictures as usual! I am drooling....even on the veg!
I love eggs and I especially love quiche. The first and last time i made quiche, i was 13 years old and my darling mother provided baking powder that was REALLY old... i dint know and we all ate the quiche that was pretty OK but it gave my mother food poisoning to the extent of hospitalization. shes okay now...
maybe i should make a quiche sometime soon since i have a GOOD baking powder in my possession.
Oooh...pass me a giant slice of that hearty ham quiche! And raspberry popovers too? You're killing me!
