You know, I was under the impression that soft shell crab season had already come and gone, I saw it for myself in fact, but this was all turned upside down when lo and behold I saw boxes of these soft little beauties all over again. I wasnt going to pass them up this time.
Soft shell crab are a little bit of a delicacy but more than that I think they are also an acquired taste, seriously you have to be ready to chomp through an entire soft crab carcass and as unappetizing as that sounds it is really quite the opposite.
Standard breading procedure but with the addition of cornmeal gives these softies the right crunch. You can have them in a salad or you can have them my favorite way and thats in a sandwich. Sometimes its wasabi mayo, sometimes its chipotle mayo but this time its siracha mayo and some fat slices of tomato on a tasty sesame seed bun. If you have never tried soft shell crab you should, it is sweet crabby sweetness like you cant even imagine.

Looks wonderful as usual. I made some fried chicken livers the other day...hoping that my husband would like them. I left them in buttermilk overnight and then dredged them in flour, panko, salt and pepper.
He still hates them.

I first tried soft shell crab in New Orleans. What a treat! It's not really available here in Seattle. (But we do have fabulous Dungeness crab!)

It's been too, too long since I've had soft shell crab! I have no problem whatsoever eating deep-fried, golden-crisp carcasses (of the soft shell crab variety, of course. All other carcasses need not apply.) I'm feeling crabby now.
I had a sample of one at a local market. I was underwhelmed. I think it was the texture..that little crunch of the shell.

those sauces are perfect. never tried a sriachi sauce. perfect. i could not fathom deep frying something in this heat though. glad you survived it.

I haven't tried it in sandwich but it looks like something I would eat for the breakfast,lunch and dinner!
oh man, I haven't had a soft shell crab since I moved up here 4 years ago. I wonder if I could even find them up this way? Damn it, you've unleashed a craving....

It's been years since I have had soft shell crab! I'm on the West Coast now and we don't see them out here. Your photo brings back fond (crunchy!) food memories.

I am telling you, these are my favorite! And have been for years and years. My mother introduced them to me when I was a child. If I see them on a menu, I order them. If I see them at the fish mongers, home they come.

hmmm, have to pass on this one! not to say that it doesn't look delicious, it does! but just the thought of biting through the shell and 'other' things is just too much for me...i'll be back to see what else is cooking :)
Yum, a soft shell po' boy!! Love it; haven't seen the crabs down here but these days we are thyankful for an seafood that isn't "pre-oiled."
Christo, where do you get your crabs from? I've seen them in a few places in Chinatown, but I'd prefer to buy from a spot that comes recommended.
