trendy not


I have always been a little bit on the fringe so when trends come and go I have either been ahead or behind the curve, I was wearing stripes and plaids back when they used to clash so for me to use foam is keeping pace with the pace I have set.


Sure people say foams are out or even some people think foams are icky but if you have never tried any you dont know what you are missing, foams pack a lot of flavor in basically - well, foam! This is asparagus foam spooned over some flash fried asparagus spears.


I used my foam to accompany my panko and morel crusted crab stuffed trout with morel butter and a pink grapefruit agrodolce.


I will be the first to admit that this dish did not have a photogenic quality to it but boy did it pack a flavor punch. This dish, along with my morel butter are my submissions to the MarxFoods Morel Challenge.

The whole dish sounds excellent and of course I love the asparagus foam! At 5 stars, foams are just as trendy as ever only now they are made a little creamier and are called froths or emulsions LOL

Foam huh? is that something you make yourself? About the only foam I have is when my soups boil a little too hard... Or maybe the foam on top of the oatmeal as it reaches a boil... OH yes! and my foamy froth on my morning coffee. I'm just a small town girl.

When I think of foam, I think of that kid on Top Chef that used them almost every week. Can't say that I have ever tried it. Good on ya though. It looks amazing!

I've never made a foam before and you have inspired me - never made an agrodolce either so that's going on the list too!

My brother and I are constantly fighting about foam. I like it. He thinks it's a waste of airspace. I'm pretty sure he's wrong.

Like the morbidity of this.

I'm with melody on t his one...I think of Top chef. and why haven't you ever tried out for that show? I've always wondered that...have I ever asked you that before?

I've never had a foam or an emulsion - I cook more "humble" fare than that, I suppose. Having said that, I'd LOVE to taste this dish - WOW!

Wow, I had never even heard of "foam." Emulsions yes. But wow, this does look tasty!

I don't understand foam, but it looks pretty with the asparagus.

And stripes and plaids still clash. Just sayin', dude. But whatever makes you happy!

I used to try to keep up with trends and I have tried making foams at home with a friend who brought all of the necessary equipment. We weren't impressed, but hey, it wasn't at your Chez What pad or we might have been.

I think I move at a slower pace regarding trends. I've still never made a foam! This sounds like a keeper though. Love morels with asparagus and fish!

OK. Let's see. We've got morels. Trout. Crab. You could have stopped there and gotten me, but foam too? I've caught the foam lessons on 5 star foodie! YUM

It's a great picture - fish and foam. Kind of reminds you of the fish swimming in the ocean.

I haven't tried foams yet. Sometimes they don't look very appetizing to me. This dish looks great though. I love the combination of flavors here!

I think you are either a foam lover or hater...I happen to think foam is a wonderful way to add texture/flavor/interest to the plate. Awesome combination in this dish---very inventive!
