how do you make the best green chile in all the land?


Dont ask me. If you ask me how to make the best chile in all the land I will lie. I have never in my life given someone a recipe that was accurate. I eat by taste, how can I write a recipe. I wish that I was a culinary genius or some kind of needy whatever and that I wrote it all down so you could worship me but I am not. I am a Cowboy Warlord that will lie to you in a heartbeat.

Throw all that like hope and piss in the wind and if you are lucky you get chile. Did you get all that? Its as close to not lying as I can get. You can click this link for another version without a recipe.

I tried to write down a recipe for a friend once, she found it very amusing, because there was a total lack of accurate measurements and a lot of "a hint of that" and "a handful of that" and "if you like it throw in some of that". What can I say, that's how I cook!

i wish there where more people that could understand that part of cooking. Just taste it, people!

And a good green chile will be with lots of chile!

I see you have fun with the hammer. :) The blender does a better job, but where is the fun in that.

Ha Ha Ha this is so funny! But I have to say that my husband cooks this way as do so many brilliant cooks. Pastry is more precise. Once my husband made me a Beef Daube with Carrots and it may have been one of the best things I have ever tasted in my life. I asked him to give me the recipe so I could post it and he shrugged and said he felt his way randonly through the recipe. Huh? Oh well. Lucky us who get to eat the meals you guys prepare. This chile or whatever looks out of this world good!

I once wrote a recipe for a friend and it included a line to "add a small handful of green anything."

Stuff happens. And then we cook. And we can never exactly replicate it. Stuff happens.

I wish to God I could cook like that. I mean, we all have recipes we've been making forever and can do without thinking, but I've never been a huge inventor. More a changer or copier.
My mother rarely looked at a recipe so when I wanted to do a cookbook years ago, I had to stand and watch while she made old family recipes. And I'd measure before she could throw it in the pot. :)

Most inspired cooking does not involve a recipe. Since the ingredients vary with the source and the seasons, taste is the most important.

This looks amazing! I love green chili anything and everything. I so agree with you about writing a recipe. There are so many times I cook something without really measuring. I just keep taste testing until it's right, then it's difficult to come up with exact amounts for others to follow.

Ehehehe....awesome post. It is so tough to note down measurements. I usually wing it myself....which is probably why I don't post a lot of my dinner items. ;)

i hear you on that one! oh do i hate writing down recipes. love the whole cooking and creating but when it comes time to remember what the hell i put in what i want to through the computer out the window.
