Blueberry cream cheese ice cream recipe

B
lueberry cream
cheese ice cream with blackberies, blueberries and a papaya coulis. This is the creamiest ice cream I have ever tasted. Try it for yourself. When I posted this on Facebook a few days ago I was overwhelmed with recipe requests but only one person, that I am aware of, actually made it and posted it Annie - The Chocolate Goddess, scroll around a bit you will find the ice cream, that is if you dont fall into a chocolate trance along the way. Thanks Annmarie for trying the recipe! In fact she tightened up the recipe wording and now I am using her version.
Blueberry Cream Cheese Ice Cream (recipe by Christo)

Ingredients:

1 quart heavy cream
3 egg yolks
1 tablespoon cornstarch (adds a nice mouth feel to the finished ice cream)
1 vanilla bean, scraped
1-2 cups sugar, to taste
1 basket fresh blueberries, washed and dried thoroughly
1- 8 ounce package cream cheese

Directions:

Scald the milk and eggs and vanilla being careful not to let it curdle. Take a small amount of this mixture and add the cornstarch whisking out any lumps. Remove from heat. Mix in blueberries and blend with an immersion blender to break up the berries.

Strain the mixture into a large mixing bowl. Add sugar and cream cheese. Whip until frothy. Add to ice cream maker as per instructions or place in metal bowl in freezer and remove every 15 minutes and stir. When frozen to desired consistency serve and enjoy and put whatever you dont gobble down in a freezer safe container, let sit out to soften slightly before serving again, if you do end up saving some.

Try it - tell me what you think.

Wow, cream cheese in ice cream? What's not to like. When my hips give me the ok, I may start the ice cream machine cranking again.

That looks GREAT. I'll have to see if Donna can pull off that dish !

sounds very tasty. Interesting that you used the cornstarch. I didn't know that it would lend to a better feel. I must try it sometime.

Man o Man! I have an ice cream maker and love ice cream so why do I keep spending money on the crap downstairs? I wonder what it would be like with mangoes? they are in season now and I've got a crateful from my friend's! Dee lish, let you know how I go! Muchas gracias, Doggybloggy!

Hey, I just got an idea....what if you put a bit of crumbled graham cracker through to make it blueberry cheesecake icecream? I think Baskin Robbins had that flavor years ago...

Christo Gonzales said...

LaDiva: you could add graham crackers but you would need more cream cheese to actually experience the cream cheesiness of it (I would add a buttery graham cracker crumble on top of each serving though, if it were me, so as not to have soggy graham crackers) - thats funny that you said mango because I had this discussion on face book a few days ago and mango is the next flavor up....

I used to make mango chili margaritas so why not ice cream or sorbet? And I was thinking butter graham crackers too....Oh man, I hate this time of day, I'm starving. What am I doing here?! haha!

Hey this is creamy creamy and so creamy; what an ice-cream should be, would be good too even sans the eggs, I think.

Love the idea of adding cream cheese! I posted a blueberry ice cream a few weeks ago and would have tried that had I known about it. Love the papaya coulis.

I keep threatening to buy an ice cream maker - Lea Ann makes the most wonderful ice creams and posts them on her blog all summer long. The started my yearning again.
