casual casserole
Needing to make something tasty but also needing a lot of it I often turn to baked pasta dishes but that idea just was not ringing my bell and then it hit me - enchiladas!
I dry rubbed some ribs, wrapped them in banana leaves and foil and cooked them until the meat shook off the bone.
I removed the meat from some perfectly roasted ribs.
Layered tortillas cheese, meat and onions.
Covered it in red chile sauce and repeated until the pan was full.
Baked it until it was bubbly and delicious and then set it out to be gobbled up. Sometimes vats of food are the answer.

Oh I like!! I think I want this for my dinner today!
You cook very decent food! I want some!
Mmm that is my kind of meal!
Casual? That's casual?...oh man...the ribs are insanely, heavenly, incredibly delicious. So is your CASUAL casserole!
Enchildadas are always a winner in my house. I love that you used ribs!
Oh my gosh, you cook so often and such fantastic fare!
Yeah, I'd dive into that vat in a second!
teresa: they were good, some were eaten out of hand and believe me when I tell you they were succulent
anette: easy enough to make thats for sure
kenny: thats very decent of you to say - thanks
christina: if you mean easy and plentiful then this is it
angie: I think I wish I said that..thanks
miranda: rib meat is always so tender so it gets "lost" in the enchiladas - which is a good thing
cynthia: I do cook often and I wish I cooked more...
TW: maybe I need to do a lunch delivery service
oh dear me. you had me at ribs!
lovely..
Ribs sound so good right now...
Mmmmmm...ribs. I love that you used tortillas as the base of the casserole. That's something I'll have to keep in mind next I make a casserole.
wow. banana leaf? Really? Damn cool! Casual my ass! This is downright gourmet!
hahaha--that looks great! I would think some people might be clamoring for those ribs when they came out of the oven ;)
Vats of food are always the answer. But I'd have stuck to the ribs...maybe...
Looks great fantastic, never made a casserole that looked like this before.

Nothing casual bout his, this is event worthy.
Vats of food, haha, solves all my problems. This looks incredible!

a rib leftover recipe... whoop whoop!!!
enchiladas with ribs meat look super terrific!
Gorgeous and delicious looking. I would love a big serving of that. That big piece of ribs looks utterly impressive. Can't come for summer to come to do BBQ. Banana leaves give a beautiful fragrance. We always use it back home.
Woo Hoo Hoo wow this is fabulous! The ribs I'd probably eat right off the bone but the enchiladas are amazing!
my goodness...that is the tops! looks absolutely wonderful
I was all set to make this today Dog...then the athlete said NO WAY..he wasn't eating that!!! But Austin is all for it. So I'm still gonna make it...just for us!
Oh man I gotta get me some of those ribs. I'm so hungry right now....
If you have a teenage boy, you need a vat. If my son goes away to college, I'll have to figure out how to cook smaller portions - maybe I'll just freeze half.
yummo. debby made some fall off the bone ribs the other night too..she poured a can of sierra mist over it...fab.u.lous.
