runner bean blossom and squash blossom risotto


Very few words are needed to describe this risotto - it was stunning, full of mysterious flavors, great tooth feel from the al dente rice, not too creamy but creamy enough, it was a hit!

The rice was toasted a little this time to give it more of a nutty flavor and to help keep its structure throughout all the stirring, risotto is nothing without the stirring, the stirring releases all the starches that create the creaminess. I tossed in the blossoms and some percorino romano for the last few minutes to melt the cheese and bring the flowers up to temperature.

Subtle, potent and delicious is the only way I can describe it, subtle because of the sweet underlying flavors of the flowers but potent due to their releasing their perfumes into the dish and well delicious because it is. Put some flowers in your food and take stopping to smell the roses to a whole new level.

Well, it's certainly pretty. So, now you stop to eat the roses? Just watch out for the thorns.

I saw those beautiful runner bean blossoms in your previous post. Very creative to combine them with the squash blossoms for a beautiful looking risotto...and I'm sure it was tasty too!

I got kind of inspired, and made kind of a risotto with red rice. It was a bit wilder looking than yours, like a devil risotto! Yum!

I have squash, and they have blossoms. But if I cook them, they won't turn into squash. What a dilemma. Risotto is one of my favorites, nice combination.

I haven't managed to use squash blossoms yet and now you've introduced runner bean blossoms! What a beautiful color they add to this risotto. I love rice already, but CREAMY rice just sends me over the edge.

I have never eaten risotto in my life, because I always feel that I wouldn't like it - I don't like mushy rice. But I guess it's also a matter of getting used to it, just like what you said in your previous post...!

Am really diggin' all the flower-lovin' dishes you've been making and that last one is so colorful! Are the flowers very flavorful? Do they taste like beans at all? Or are they "flower-y?"
