This post inspired me this morning, DB. I didn't do chile eggs, but I made my wife some garlic basil fried noodles and put two eggs on top. She called it the best breakfast ever, so I give you the assist on this one.
I have now made a vow NEVER to read your blog at 2am.....because all I can think about is....I've got to try this chili and egg dish....
I enjoy a variation of this... fry an egg...then placing a slice of cheese (or a large handful of shredded cheese) on top of it till melted... then top that with a big dollop of fresh salsa....place this concoction on a warm bagel half.
okay...too bad I have to sleep first before I get to eat....

Eight years ago, I had never thought to put hot sauce on my eggs. Now I can't imagine them without it!

Buffalo: this is dried red chile pods that have been put in the blender with a little garlic, water and salt and blended till smooth then heated up.

Dana: this actually has a corn tortilla that was drenched in the chile and then covered in cheese under the eggs...and it was dinner
