nachos with blue and yellow corn chips


Some of you may see me on facebook and you might notice that I post pictures there before I write the post over here. Its a new bad habit I have developed since facebook does not require that I type whereas the blog taxes me creatively. I know what you are thinking "there isnt much creativity here on this blog just a lot of snarky crap" well I have news for you - creativity comes in many guises and so do nachos.

As a parent it is our job to create positive memories for our children and I do this through food. Seriously what better memories are there? My son has been eating "nacho cheese with nacho chips" since he first coined that term 7 years ago. I have always made the chips myself because the crunch and chew of a fresh tortilla chip has no equal.

Blue and yellow corn tortillas get cut into triangles and fried while I melt some cheese into a thick sauce to pour over the piled high mound. I add either some salsa or pico de gallo before drizzling the hot cheesy goodness and lately I have been making things "kamikaze" style where I hide some piece or pieces of really hot chile as a little "surprise" that he totally loves. What are your favorite food memories?

I have a nacho memory of my own. My Mom and I used to love coming home from a Sunday afternoon of mall shopping to make a platter of nachos. I think I like them spicier now than I did then!

i wish i was allowed to cook more when i was young. Mom always feared i would make a mess.
which is ironic considering in my adulthood, my kitchen is tidier than hers. and I cook more than she ever did.
But when she would bake cakes (for birthdays only) she would let me lick the beaters while the cake was baking. I have a sweet addiction to cake batter.
Lovin those nachos!

Ok those nachos look amazing! What a lucky little boy :)

I will share my favorite food memory but you can't think I'm gross. Deal? My father was a deer hunter and when he would get a deer my favorite thing was helping him butcher the deer in the garage and then going into the house and having a fantastic dinner of deer heart. I know it sounds gross but deer heart is delicious. Plus we were only able to get it once a year and only if my dad got a deer. I once went three years without any tasty heart...yum!

lauren: sure why not - there are enough food groups here - just add a cup of coffee and you are set

mo: come on - who doenst love to lick the beaters - while I dont do it anymore - my kid loves it!

ravie: I want to try and make red white and blue chips - I have some red corn meal...

nutmeg: not gross at all - try this on for grossness - once a year or so we would slaughter a pig for a big party called a "matanza" it would start at sunrise and end at sunset - if you got up early you could get some of the ears and the tail and the liver and the heart and the sweetbreads and the kidneys that had been tossed into the coals - nothing finer with a little salt a warm tortilla and some green chile!

Snarky crap is definitely creativity. That's my story and I'm sticking too it. Nacho cheese, nacho chips, and spicy surprises sound so good right now.

I really need some freshly fried chips now! Some of my favorite memories are mushroom hunting with my dad and the marathon holiday baking of my grandmother.

I could eat the whole plate and I'm not kidding either. Homemade nacho chips and homemade sauce? Did I die and go to heaven?

When I first started my career in Texas, my roommate and I ate out every night. Neither of us were much of a cook and we loved Mexican food. Would you believe I ate nachos probably three to four times a week? Those were the days when my waistline could stand it....

hmmm, food memories. i think there will always be a soft spot for home cooked comfort casseroles since that's what i was raised on.

i happen to enjoy snarkiness, don't change.

Lots to love here, Christo. Those blue corn chips, homemade chips (delicious), cheesy sauce and the bits of hot pepper . . . FABULOUS! I remember watching my step-dad (bonus dad) eat hot peppers and he'd lure me in, telling me they were not hot. I'd taste a tiny sliver that he offered and came to love that hot pepper rush! (still do)

How do you get the blue tortilla chips to be so bright blue? They look great in the picture. Now I want to make some nachos.

the bright blue comes from the tungsten lights for the photo- the third picture is more accurate as to the actual color of the chips - but to keep the color rich I fry them in 300 degree oil rather than super hot so that they dont brown...

wow...blue chips...never seen them before, saw pink ones, but blue ones are really rare!
